Enjoy a cup of Turkish coffee the next time you are visiting Leila Restaurant. Turkish coffee refers to a specific method of preparing coffee, not to a particular flavor of coffee. Turkish coffee is best prepared with freshly roasted Arabica coffee beans, which are ground to a fine consistency immediately before brewing. The coffee is ground almost as fine as powder, and is even finer than the coffee used when making espresso. Although Turkish coffee grinders are available in the marketplace, a burr grinder will work just fine.
A specialized pot; called a cezve or ibrik depending on the country of origin, is filled with water. The pot is usually made of copper and has a long handle, sometimes covered with wood, which prevents the person preparing the drink from burning their hand.
The ground coffee and sugar are added to the pot of water and stirred until the sugar is completely dissolved. The pot is placed on the heat source and heated just until it begins to boil and starts to foam. The pot is immediately removed from the heat to prevent the coffee from burning and the foam from spilling over. The pot is returned to the heat for a second and sometimes third heating.
To serve, slowly pour the prepared beverage into small cups, making sure most of the coffee grinds stay in the bottom of the pot without being transferred to each serving cup. Enjoy your cup of Turkish coffee, served hot and sweet, without adding any milk or cream. Finely ground cardamom seeds or cinnamon are sometimes added to the coffee grinds before brewing.
